301? redirects, or point domain to new site?

As I have mentioned in a couple of other threads I am building an e commerce site for our family florist. I currently have an informational site hosted on IX webhosting. I am building the store site on Big Commerce.

a) Would it be better to do redirects from each page of the old site?

b) Trash the old site and just point the domain on the new site?

The Domain name is registered at Go Daddy. Not that that really makes any difference.

The new site will be an online store but primarily for local sales and delivery or flowers and giftware products.

Ideas? Advice? HELP lol
